Food allergy and intolerance on the rise

"The global food allergy and intolerance products market is projected to exceed $26 billion by 2017"  according to a new report by  This is due to dramatically "increased diagnosis of digestive health conditions, growing interest for wheat-free and gluten-free diets, improved labeling regulations, and tastier and innovations in the category."
While this is great for us as consumers of allergy friendly products, makes you wonder where this is all going doesn't it. Just what has big business done to our food chain to be making us all so sick?
