Turkey Roulade recipe


Christmas is almost here, can you believe it?
Thought I'd share a recipe with you from my Allergy Friendly Christmas recipe ebook
 
If you have multiple allergies you need to be careful. I've found many turkeys contain ingredients that aren't safe. This is something I make that is delicious and I know it's safe
 
Turkey Roulade
 
 

You will need...
 
1 kg Turkey mince
2 cloves garlic, minced
1 onion, finely diced
1 leek, chopped
1/3 celery stick, diced finely
1 carrot, grated
1/2 cup spinach leaves, finely diced
1/2 cup rice crumbs *See Note
3/4 cup cranberry sauce
1/2 cup cranberries
Rice crumbs
Dijon mustard
1/3 cup Ground seeds (toasted sunflower and peppita’s)
 
Method...
 
1. Preheat oven to 180°C
2. Roll out mixture to a rectangle in between 2 sheets of greaseproof paper
3. Remove top layer of paper.
 
 
 
4. Spread turkey mixture with Dijon mustard and then with cranberry sauce.
 
 
5. Sprinkle ground seed mixture over turkey. Roll up as you would if you were making a Swiss roll.
6. Place turkey onto greased baking tray.
7. Cook for 25-30 minutes, until firm to touch.
8. Heat cranberry sauce in microwave for 30 secs. Brush over loaf. Sprinkle with rice crumbs. Return to oven for 10 minutes.

Slice turkey roulade. And serve. Pour over extra cranberry sauce and sprinkle with
cranberries.
 
 
 
Serve with baked vegetable and asparagus hollandaise.
