Bubble Slice



I threw these together as an alternative to the Aribars which we ran out of. I guess you could say they are the healthy and allergy friendly version of LCM bars too. These are so easy and quick to make. Perfect for lunchboxes, picnics or any time.


You will need...
4 cups puffed rice ( you could use rice bubbles, but they are not gluten free)
2 cups coconut
1/4 cup chia seeds
3/4 cup raw honey (you could use rice malt syrup, maple syrup or golden syrup)
1/2 cup coconut oil
1/4 cup raw cacao powder ( could replace with Berry Choc Chunk or DariFree Chocolate)


What to do.....
Grease and line a square dish or lamington tin.
In a large mixing bowl combine puffed rice, coconut, chia seeds and cacao powder. Stir until combined.




Place coconut oil and golden syrup together in a heat resistant bowl or jug. Place jug into a dish of boiling water. Alternatively, heat gently in the microwave, or in a saucepan over low heat.
Pour coconut oil and sweetener into mixing bowl. Stir with a metal spoon until combined.


 

Scrape mixture into prepared dish. Press mixture into dish until evenly distributed.
refrigerate for a few hours until set.
