12 Medjool dates, pitted and roughly chopped
2 cups desiccated coconut
2 teaspoons lemon zest
1 Tablespoon Eskal Free Nut butter (sunflower paste)
1 Tablespoon Coconut oil
1 cup glace cherries, chopped finely (or fresh cherries, pitted)
extra desiccated coconut for rolling
Place coconut (2 cups), dates, freenut butter and coconut oil into the bowl of food processor. Process until smooth. Scrape mixture into a bowl. Stir in lemon zest and cherries until combined. Roll mixture into small evenly sized balls. Toss balls into coconut. Serve.
Store in the refrigerator.
