A quick delicious chicken dish, loved by the whole family. This would be great with chicken legs also and perfect to tuck into school lunchboxes.
You will need
4 Chicken thighs (or chicken legs)
1/4 cup coconut aminos
1 lemon, juiced and zested
4-6 garlic cloves, squashed and chopped ( no need to peel)
1 teaspoon Dijon mustard
1 Tablespoon honey
1/2 teaspoon turmeric
1/2 teaspoon paprika
1 Tablespoon olive oil
Freshly ground pepper
What to do...
Place chicken thighs into an ovenproof dish. Mix together all other ingredients into a glass jug or mixing bowl. Stir until combined. Pour over chicken. Cover and refrigerate for 20 minutes.
Turn chicken over, cover and refrigerate for another 20 minutes. Remove from fridge and place into oven set at 180C. Cook for approximately 20-25 minutes, drizzling marinade over chicken half way through cooking.
Serve with roast potatoes and salad. Delish!!!
And what do the food critics say???? For a child who doesn't normally eat meat off a bone - I think this is another winner!
